Well, you pretty much already nailed half the ingredients just by reading the title. Ground beef, sweet potato, brussels sprouts, red onion, garlic powder, oregano, and sea salt. That's it!
I typically use either 80/20 or 85/15 grass-fed ground beef because it is SO flavorful! I recommend using a fattier grass-fed ground beef for the most flavorful, best results.
This simple combination gives you plenty of protein, fiber, complex carbohydrate, vitamins and minerals, and it's nice and satisfying.

What I love about this recipe, aside from its tastiness and health benefits, is I throw every last ingredient into the skillet at the same time, and cook.
So essentially, it takes zero brain power to make this recipe!
How to Make Ground Beef and Sweet Potato Skillet with Brussel Sprouts:
Add all of the ingredients to a large skillet and heat to medium-high. Place the ground beef in the center of the skillet to allow it to brown for 2 minutes before flipping it to the other side and browning another 2 minutes.
Chop up the beef using a spatula, then stir it into the vegetables.
Turn the heat down to medium, cover the skillet and cook for 10 to 15 minutes, stirring occasionally, or until the vegetables have reached your preferred level of done-ness.
Taste for flavor and add sea salt to taste.
How to Serve This Meal:
Your serving options for this meal are endless! You can eat it as is (this is the sort of meal I eat for lunch), serve it up with steamed brown or white rice (I do this for dinner, which is when I eat the majority of my carbs), cauliflower rice, and/or more sautéed or roasted veggies.
If you do dairy, feel free to grate some parmesan, cheddar, or mozzarella cheese over everything while it's still steamy hot. Gouda cheese would be goooodah too!
